Red-coloured foods are rich in lycopene, which reduces the risk of cancer and protects against free radicals produced by the sun.??Cut the tomatoes into pieces and cook them in water to which the butter and several concentrated stock cubes have been added. When they are ready, purée them and add the chicken stock prepared previously. Season and add the parsley and gherkins.
It you wish to give the soup some extra flavour, you can add a little sour cream and a few drops of gin or vermouth.
